Crispy Gluten Free Waffles

Waffles have a special place in Swedish homes, and for many of us they are tied to childhood memories, cozy Sunday afternoons and the irresistible smell of a hot waffle iron. They are simple, comforting and endlessly adaptable.

In Sweden, we love waffles so much that we even celebrate them with our own day. Every year on the 25th of March, we enjoy Våffeldagen, a tradition that fills kitchens, cafés and homes across the country with freshly baked waffles.

For me, waffles are a reminder of slow moments, shared fika and the joy of making something easy yet incredibly comforting.

Ingredients (8 waffles)

  • 100 g butter
  • 2 dl cornstarch
  • 2.5 dl gluten free flour mix
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 2.5 dl milk
  • 2.5 dl cold water (or replace 0.5 dl with sparkling water)
  • Optional: 1 tsp ground cardamom
  • Optional: zest of 1 lemon
  • Optional: 1 tsp vanilla sugar

To serve

  • Lightly whipped cream
  • Jam
  • Fresh berries

Instructions

  1. Melt the butter and let it cool completely.
  2. Whisk together cornstarch, gluten free flour mix, baking powder, salt, milk and water into a smooth batter.
  3. If you want to replace 0.5 dl of the water with sparkling water, add it after the butter. Gently fold it in so it keeps its bubbles.
  4. Add the melted butter and let the batter rest in the fridge, preferably overnight.
  5. Heat the waffle iron and grease it lightly. Then cook the batter into golden, crispy waffles.

Serving

Serve the waffles with lightly whipped cream, jam and/or fresh berries.
